The first course is a crab cake with a roasted beet-apple slaw, saffron aioli and grilled scallion coulis paired with the chardonnay. The cabernet sauvignon or cabernet franc will be served with something called guanciale-pecorino-crispy kale - with a local egg (fried) and orange infused white balsamic vinegar. Now before you jump over to Google Translate, the guanciale is actually a type of bacon made from the jowl of a pig. Seasoned and cured for three weeks, but not smoked, the flavor is typically stronger than bacon - and better!
Since Sophie's is a steakhouse at heart, the main course is an espresso-seared filet mignon with a forest mushroom demi-glace. A hearty cabernet sauvignon or cabernet franc will accompany the main course.
For dessert, a goat cheese and chocolate truffle with roasted almonds and raspberry coulis. Continue sipping the cabernet sauvignon or try the syrah.
